Why?
Because I ended up with 3 cayenne peppers.
You see, I thought we didn't have any and I checked, but I guess I didn't see that we already had two. Whoops.
Anyway on to the Recipe: Pecan Crusted Catfish
It was so easy and delicious and healthy. It was a triple win.
Here is the recipe, adapted from Eat, Live, Run.
Ingredients:
4 catfish fillets, about 5 oz each
1 cup finely ground pecans (I put them in a plastic bag and whacked them until they were ground up)
1 cup buttermilk
2/3 cup Panko breadcrumbs
1/2 tsp garlic powder
1 tsp dry mustard
1/2 tsp black pepper
1/2 tsp cayenne pepper
1 tsp salt
Directions:
Preheat oven to 375 degrees.
In a shallow dish combine all the dry ingredients (everything but the buttermilk and fish). Take the buttermilk and pour into another shallow dish (add a dash of cayenne pepper to the buttermilk). Take each piece of of soaked catfish and dredge in the nut mixture. Place on pan that has been sprayed with non-stick cooking spray.
Bake for 30 minutes. It should be golden and fish should flake easily.
Serves 4.
Yum.
It goes especially well with wine. Which is very important to me.
This is definitely a recipe I will use again.

I may need to try this! I have been convinced that it is impossible to bake catfish after I attempted a healthy alternative to frying the damn thing. Or maybe I'll follow this recipe and then fry it...just for shits and giggles.

I've never had catfish...so serious. I'm kinda scared to try it!!! But this actually looks pretty good.
Too bad there's no catfish in Germany... maybe I can try another.
